You will need:
4 cups whole wheat flour, sifted
1 tablespoon melted butter
½ cup warm milk
½ cup warm water
1 tablespoon sugar
1 teaspoon salt
- In a large bowl, mix together the flour, melted butter, salt and sugar.
- Make a well in the middle and add warm water and milk, mixing it with the flour until you get a soft dough.
- Dust flour onto a clean worktop; place the dough on the flour and knead for ten minutes.
- Cover with cling film and leave for an hour. Split the dough into three-inch balls.
- Flatten the dough balls into six-seven inch circles. Cover with cling film. With an adult’s help, heat a cast-iron skillet on a medium-high heat.
- Place one roti on the skillet and cook for 30 seconds. Turn over and cook for another minute until you get small air pockets. Turn it over once more and cook for another minute.
- With a lightly-wet towel, press on the roti, forcing it to get more air pockets.
- Keep the finished rotis warm in a towel as you continue to cook other rotis.
- Serve hot with dahl, vegetables or any filling that takes your fancy.

You will need:
10 tbsp mixed lentils
2 chopped tomatoes
1 medium onion
Very small quantities of coriander, garlic, and ginger
Pinch of garam masala to taste
- Boil the lentils with 5 cups of hot water. Once they are soft, mash them up and add the spices.
- In a separate pan, fry the onion, garlic, and tomato for 2-3 minutes and then add to the lentils.
- Finally, add a handful of coriander to the soup.
- Your dal is now ready to eat!
